Day 23: All I can eat Ice Cream!

Well something is up with me today, I watched the pvr Grey's Anatomy and sobbed most of the time, then all I could think about till I got the kids to bed was trying out this "rawish" ice cream recipe that Yogi Sam sent me over a year ago.  Wow I can't believe I waited till now to make this stupid healthy incredibly tasty treat!




I call this:  Banilla won't Split your pants!

Ingredients:
2-3 frozen bananas
3/4 C frozen strawberries (puree in blender)
2 Tbsp nut butter of choice (unsweetened, raw is good)
1 Tbsp agave nectar (like honey or maple syrup, either would work)
1 tsp vanilla extract (get the real thing!)
1-2 Tbsp carob or cocoa powder (unsweetened)
1 fresh banana
- dash sea salt
- sprinkles and toppings (sliced almonds, chopped walnuts, syrup, chocolate shavings)
Make "banilla base" ice cream by combining frozen bananas, nut butter, agave, and sea salt in food processor until very smooth.
Remove one big scoop and put in freezer.
Add strawberries to what's left in your food processor. (it's nice to puree these first and process until just combined - they tend to stay frozen otherwise)
 Put a scoop next to banilla and freeze.
Add carob/cocoa to what's left of the strawberry and process until combined.
Slice fresh banana lengthwise and make your toppings up. Enjoy!

I honestly could only eat half and froze the rest for another day!  But I can't believe how easy it was to make.  I believe the key is to have a really good food processor.  Mine is good!  But so many others are available, yes it might be a big addition to your kitchen, but this is what I did... clean out your "plastics cupboard" and make room for this kitchen hero!   You really shouldn't be storing and heating your food in plastic anyway!

  3. hey! this post totally inspired me to play wih the idea of "clean ice cream". Since nut butter is a no go as a cooking material in our house (Pete has a strong distaste for all nuts) I mulled over ideas for an adequate substitute.

    This is what i came up with....first batch is in the freezer now.

    2cups of frozen mango and local strawberries
    2 very ripe bananas (needed to move)
    1 squirt of Agave (probably about a tbs or less)
    and two scoops of Vega whole food optimizer (unflavored) this is what gives it a creamy texture and a rather unfortunate colour but when mixed with berries or cocoa sort of just looks chocolatey.

    My sample scoop was a hit so i'm excited! Perfect timing for the 119th birthday of the ice cream Sundae!
