Second day of cooler1- a la GF sort of vegan style

Day 2 of post thanksgiving detox.  No dizziness, at least, but a faint annoying headache all day.  I managed to get more protein in today. Tomorrow I still need more.  I had a funny teaching day, it is Wednesday but I had my Monday schedule so I didn't start teaching until 1:55 in the afternoon.  So I had a lovely morning.  I had my breakfast, then went to the gym for a 30min CXworks class (I didn't think I would be ready for a double just yet).  I surprised myself because I wasn't as out of shape as I thought I was.  Anyway after that I stopped at the grocery store to pick up my coffee and some produce to get me through the day. Then I met with Mark at one of the early years centres to play with kid #3 and kid #4 (aka, Patrick and Ellie-Lynne).  Then home, lunch, cooking food and off to work!  Here are my eats.

Breakfast:
1/2 GF oats
3 tbsp hemp hearts
1 tbsp raw almond butter
1 tbps chia seeds
2 tbps apple sauce
1 tsp cinnamon
unsweetened almond milk poured over
water

snack:
field cucumber
decaf americano with a bit of soy milk(I'm trying to cut it out, I only had about an inch today)

Lunch:
zucchini noodles(most of a small zucchini)  - see pic bellow
a cup of homemade pasta sauce
tempeh (about the size of a deck of cards)
water

snack:
1.5 cups of homemade roasted red pepper (rrp) soup - see pic bellow
3 tbps hemp hearts
decaf coffee with unsweetened almond milk

Diner:
a can of tuna with olive oil drizzled over it
a mug of rrp soup
water

rooibos tea with unsweetened almond milk

Sliced zucchini so it has the look of pasta! I kept it raw.

Tempeh cooked in the pasta sauce Mark made for me last month!

Soup:
3 red peppers roasted on BBQ - skin peeled off (or most of it)
1 onion
1 celery stalk
1 carrot
1 small sweet potato
1 tetra pack of no salt added veg broth
a bit of chili pepper to flavour

After attacking it with my hand blender!

From Market to Table!

Yup most of the strawberries were eaten on the way home.

Friday means farmer's market day (well so does Wednesday and Saturday morning) but I love doing it Friday morning because my favorite farmer "Ray" is at the booth and he is so wonderful. Taking the time to answer all my OCD questions.  "What do you do about rabbits? How do you get rid of slugs? When do you pick your garlic? Where do you plant the kale?" etc.... I really do pester him that much.  But lets me honest, he loves it!  The poor man spends all day (except friday in the field) from sun up to sun down! And so does his poor wife!  They both love their days at the Market!  I got my eggs, peas, tomatoes and strawberries from him today!  Salsa, kettle corn and bagels from others!  I made an omelet (or frittata, what ever you want to call it)!

Here are the pics.  I also used my own garden produce to make these!

The guy who makes this sells it :) fun!

The owner of this company is soooo sweet!  she knows me (ok well I go every week for my bag of sweet and salty) and she gives me double stamps on my cards sometimes :)

Random shot! Our garlic is almost ready to be picked!  Some of them are the size of baseballs already!!!

A little red onion that I pulled out accidentally when weeding, so it will go in my omelet!

I just thought everyone should see what asparagus looks like (during the off season), that tall wispy plant in the middle of this shot is what an asparagus sprig turns into.

Very fern like, it needs to go into this "flower" phase to regenerate the roots so that next spring we can get a whole new batch of wonderful asparagus!

My super awesome herb garden!  Random tree growing in it (I didn't plant it, it was a seed planted by an animal and I let it grow).  For my omelet I picked kale, oregano, parsley and basil! and chives for the garnish!

Goes on the bottom of my frying pan! (or skillet, not really sure what to call it)

I used a tiny bit of this grated!

All the ingredients were chopped up, mixed and and cooked on the stove (med-low heat) till the bottom started to bubble, then I put it under the broil and added the salsa and cheese!

It did in fact come off the pan that easy!

Added the goats milk yogourt and chives!

Delicious!!!

Raw Asparagus Salad!

So we all know what BBQ season means!  Tons of meat grilled with lots of extra grams of saturated fat (in the beef burgers). But I challenge you to try something different this year.  When everyone is grabbing stuff to throw on the grill why no go raw instead!  You will feel so good about it!!!  Have you ever eaten raw asparagus?  Well assuming it's the good stuff either from a farmer's market (local and organic) or from your own garden like mine, it is amazing raw! The tender white center is so sweet, sort of like the tender inside a broccoli stem!  (Please tell me you don't compost this part, it is sooo good, just peel away the tough outside and the inside is delicious)

This salad has massaged kale and spinach (in olive oil), asparagus, red peppers, carrots (I got these at Organic Garage, the kids love how they are pre-cut), tempeh, humus and beanitos.

Fermented Foods!

Well I think with everything I do, I am always striving to be better.  It must be the type-A thing, but I think I've mastered getting rid of the crappy junky food-like substances in my diet, I eat very clean, I supplement with chlora, fish oil, probiotics (lactobacillus acidophilu), vit D and a prenatal multi-vit. I've added tons more green leafy veggies, I eat less meat, less dairy and no gluten.  I consume loads of good fats (EFA's), ok not like it's really that hard.  Truth be told my favorite all time snack is natural peanut butter on celery.  I eat almond butter by the spoon full!

The point is it's time to move on. My diet is clean, but is my gut? Who knows what I'm actually absorbing?  But I do know that from what I've read, eating fermented food is like eating food that is partially digested.  Ok ok.. relax, I know that might sound gross.  But seriously it's pretty awesome, half the work is done for you!  You are half way to absorbing all the healthy nutrients.  If you are interested here is an article that is a great spring board to your own personal research (http://www.thefamilyhomestead.com/fermentedfoods.htm)

I used to buy tofu every week at coscto because it was a cheap, high protein and low sodium food.  Now I've moved on to tempeh (a fermented soy product), it has basically the same texture as the firm tofu, but it tastes a bit more complex.  And it has the same amount of protein, not to mention the naturally occuring probiotics.  I've bought kimchi (just today actually) because it too contains probiotics and other great nutrients.

Oh before I move on a short lesson on the difference between probiotics and digestive enzymes.  Digestive enzymes start to work in your stomach (they break the food down into smaller particles - aka catalist to the beginning of digestion), probiotics are strains of bacteria that continue the digestive process in your colon, by keeping strains of yeast, harmful bacteria and other pathogen infestations at bay.  Basically by adding  more probiotics you are keeping yourself healthy because most of us don't have enough probiotics left in our gut (look at how often we get sick) and by adding more digestive enzymes you are making it easier for your body to actually absorb the nutrients of the foods you are eating. And to complicate you life even more, probiotics are microbacteria, and prebiotics (have you seen that word) is basically food for your gut bacteria.  This is a very very simplified definition. But I'm trying to make this info user friendly.

So back to fermented foods!  Here are 6 foods you should try!

1) Natto: fermented soybeans
2)Kimchi: a mix of fermented (like pickled) cabbage, radishes, peppers and other veggies
3)Miso: produced from fermented soybeans/barley/brown rice
4)Tempeh: fermented from partially cooked soybeans
5)Sauerkraut: fermented cabbage
6)Kefi: fermented milk beverage

Great info and descriptions of what these are and how to eat them found on this website: http://theconsciouslife.com/top-probiotic-foods.htm
