Day 30: Chilli salad

I can't believe I even made it 30 days with no caffeinated coffee.  That's impressive.  But this morning as I was rushing out the door with my kids, our giant packed snack of celery,asparagus, carrot sticks, sweet potato curry hummus and orange slices, I remembered with a smile that I could cheat and pick up a coffee.  I decided to splurge and thought about where my favorite brew could be found.  Second cup has fairly traded coffee, which I like, Starbucks is great too, but not as ethical... Bukamaranga ( a fresh Bagel store in Burlington beside the Chapter's on Fairview) carries Seatle's Best coffee.  And I did notice that every now and then they brew a fair trade roast, I crossed my finger's, brought the boys in to each pick bagels and I nabbed a large coffee.

Sigh*** I was in heaven.  Could it be that something that is supposed to be so bad for you, actually be so important in maintaining proper water retention levels? Well as I type this now, I am starting to see the lines of my fingers.  The sausage's have shrunk slightly from yesterday... However I can't only attribute it to the caffeine, as much as I would want too.  I did eat tons of raw celery, asparagus and salad today!  And tonight when I got on the scale it was down 1 lb from yesterday.  That is a small success that I was hoping for.  Here was my lunch.  I made a pot of chilli yesterday for diner (vegetarian - for cost purposes and less fat content), so today it was the perfect pair for my spinach and other raw veggies.

Chilli Salad

bed of spinach
celery
asparagus
roma tomatoes
green onions
leftover veg.chilli
pressed no fat cottage cheese
Bean and Rice chips - Pico de Gallo

(ps. these are gluten free and so yummy)
The seaweed and sesame flavour is by far my favorite. 
Here are the ingredients not perfect, but not bad either.

Brown rice, brown rice flour, masa corn flour, white rice flour, high oleic expeller-pressed safflower or sunflower oil, sesame seeds, dried seaweed flakes, evaporated cane juice, salt, torula yeast, dehydrated garlic, yeast extract, sesame oil, dehydrated onion, honey powder, cultured whey (contains milk), paprika, ginger, cayenne pepper, citric acid, tricalcium phosphate (anti-caking agent), steam-distilled oil of ginger, natural caramel color.


And here is the nutritional information if ever you were looking.  The sodium isn't bad and I actually find they are sweet and salty (for when I get those evil cravings).

  1. ps. I just noticed that the pico de gallo ingredients are better but the sodium is way higher... Darn trade offs.

  2. Hey you, Yummy salad!!! I love those brown rice chips; the pico de gallo is my fave.
    Happy to hear you are feeling better.
    When I quit coffee for 6 months, the frequency and intensity of my migraines spiked despite healthy habits like exercise and clean eating. What is one to do? So I am a lifer on black coffee, in moderation.
    Your garden looks incredible by the way!
