Did you eat pancakes today?

Do you know why pancake Tuesday is even called that?  Well it was a way to traditionally rid the house of all fats and sugars before Lent.  Now I'm not going to get into a long discussion about Lent, but the bottom line is that I believe that by challenging myself I will appreciate what I have all the more.  Isn't that concept a good one?  How about the idea of purifying yourself?  How many of us have done spring cleaning, that idea of detoxing goes right along with it.  It's just a physical reminder (on the calendar I mean), that helps us to focus our attention to an area of our life that normally get's put on the back-burner.  I'm sure most of us clean our houses when we are going to be hosting a party, or when special company is coming for a visit.  We want to make a good impression, plus it feels good doesn't it???  To look around and know that everything is in it's place.  That is what lent is for me, it's a sweeping/cleansing of my spirit!   So whether you believe in Lent or not is not that I'm trying to get across here, it is that: the act of cleansing and detoxing is a good exercise no mater what.   

So yes I had pancakes today.  They were my oatmeal buttermilk ones but I added an extra 1/3 C. of Flax meal and I substituted some of the white flour for extra whole wheat.   I covered them in warm berries and chia seeds (my berry compote!) and very much enjoyed having pancakes for diner, and I'm pretty sure my daughter and husband also enjoyed getting two pancake meals today!

  1. I had pancakes last night, we made spinach-ricotta potato pancakes. YUM!
