Second day of cooler1- a la GF sort of vegan style

Day 2 of post thanksgiving detox.  No dizziness, at least, but a faint annoying headache all day.  I managed to get more protein in today. Tomorrow I still need more.  I had a funny teaching day, it is Wednesday but I had my Monday schedule so I didn't start teaching until 1:55 in the afternoon.  So I had a lovely morning.  I had my breakfast, then went to the gym for a 30min CXworks class (I didn't think I would be ready for a double just yet).  I surprised myself because I wasn't as out of shape as I thought I was.  Anyway after that I stopped at the grocery store to pick up my coffee and some produce to get me through the day. Then I met with Mark at one of the early years centres to play with kid #3 and kid #4 (aka, Patrick and Ellie-Lynne).  Then home, lunch, cooking food and off to work!  Here are my eats.

Breakfast:
1/2 GF oats
3 tbsp hemp hearts
1 tbsp raw almond butter
1 tbps chia seeds
2 tbps apple sauce
1 tsp cinnamon
unsweetened almond milk poured over
water

snack:
field cucumber
decaf americano with a bit of soy milk(I'm trying to cut it out, I only had about an inch today)

Lunch:
zucchini noodles(most of a small zucchini)  - see pic bellow
a cup of homemade pasta sauce
tempeh (about the size of a deck of cards)
water

snack:
1.5 cups of homemade roasted red pepper (rrp) soup - see pic bellow
3 tbps hemp hearts
decaf coffee with unsweetened almond milk

Diner:
a can of tuna with olive oil drizzled over it
a mug of rrp soup
water

rooibos tea with unsweetened almond milk

Sliced zucchini so it has the look of pasta! I kept it raw.

Tempeh cooked in the pasta sauce Mark made for me last month!

Soup:
3 red peppers roasted on BBQ - skin peeled off (or most of it)
1 onion
1 celery stalk
1 carrot
1 small sweet potato
1 tetra pack of no salt added veg broth
a bit of chili pepper to flavour

After attacking it with my hand blender!

Raw Asparagus Salad!

So we all know what BBQ season means!  Tons of meat grilled with lots of extra grams of saturated fat (in the beef burgers). But I challenge you to try something different this year.  When everyone is grabbing stuff to throw on the grill why no go raw instead!  You will feel so good about it!!!  Have you ever eaten raw asparagus?  Well assuming it's the good stuff either from a farmer's market (local and organic) or from your own garden like mine, it is amazing raw! The tender white center is so sweet, sort of like the tender inside a broccoli stem!  (Please tell me you don't compost this part, it is sooo good, just peel away the tough outside and the inside is delicious)

This salad has massaged kale and spinach (in olive oil), asparagus, red peppers, carrots (I got these at Organic Garage, the kids love how they are pre-cut), tempeh, humus and beanitos.

Raw Vegan Strawberry Ice Cream (for breakfast)

So I told everyone that I would be going vegan AND raw today!  Ha ha, look at the date however.  I do love vegan food and raw food but I can't give up salmon or rice just yet!  But in honor of april fools I made strawberry ice cream for breakfast.  It was so good, I had to share most of it with my kids!

So I did manage to get into my young coconut this morning.  Not too bad.  I shaved of the top, made a couple of holes (to drain the coconut juice), then used the bottom of my blade to crack the top off, then I just pealed the inside out with the spatula.

I found these yummy snack at the local grocery store!  Awesome find if you ask me. The kids love them.  GF, Vegan and raw! score and 3$ a bag!

Hard to see what I mashed into my bullet, but about 1/3 of the coconut flesh, 1/2 the coconut juice, a handful of frozen strawberries, a tbsp of chia seeds, a scoop of vegetarian protein powder, juice of 1/4 lime and some water to fill.

Blend, scoop, serve with buckwheat snack.  (I actually got 3 cups like this) so my kids happily ate this all up!

Surprisingly creamy!  BUT no dairy, no gluten, no sugar, and vegan!

Heart Healthy Key Lime Pie

Well ok mine doesn't look like the one on the Steven and Chris Website, but I made it because I really approve of all the ingredients (plus I had them all).  In the next couple of days my diet is going to be restricted again, my tri-weekly reboot, part cleanse, part diet, part rebooting my palate.  I don't dread the two week process, not at all, I know I'll lose some excess weight, I'll feel amazing, and most of all I'll re-train my taste buds to what real (sugar free, un-processed food, salt-free) food really tastes like.  Sooo anyway here are my pictures to the recipe.

1 cup raisins
1/3 cup unsweetened coconut flakes
3 tbs cocoa powder
2 tbs hemp seeds

As you can see I didn't have the fancy shmancy pie molds that they had on the S&C show, but improvised.  I combined all these ingredients in my food processor (I took about 5ish minutes to really break down the ingredients), it looked crummy but when I pressed it together it held, so I assumed it was right!

1/4 cup key lime or lime juice, freshly squeezed
I used 2 limes to make this.  Which is probably why it tastes fantastic.  Ummm real lime!!!!  but I don't actually have a "reamer" so I did it with a fork.
1 cup pecans ,1 avocado
1/4 cup key lime or lime juice, freshly squeezed
1 tsp lemon juice, freshly squeezed
1 tbs extra virgin coconut oil
1/2 cup agave nectar

I just added these ingredients to my food processor and let it whirl away for a good long time.  The brown flakes were clearly from the pecans (I have no idea how theirs looks so good) and my avodado was really ripe so I think that is why the green colour isn't as vivid.  But let me tell you the taste makes up for it!!!

I ended up with 6 tarts!
It might not look delicious, but do not be fooled!!! This is amazing.  It is creamy and the fresh lime just bursts in your mouth.  And OMG I feel so good about all the ingredients.

GF raw peanut butter brownie (vegan, sugar free and dairy free)

The secret to these delicious brownies is the simplicity of their ingredients. The base is chick peas, dates and peanut butter.  Then everything else is just bonus.

Ingredients: eden chick peas, natural organic peanut butter, whole dates, vanilla, cocoa powder, unsweetened shredded coconut and chia seeds.

GF raw peanut butter brownie recipe
10 pitted medjool dates
1 drained and rinsed can of Eden Organics chick peas (garbanzo beans)
1 1/4 cup natural peanut butter
2 tbsp vanilla
1/2 cup cocoa powder
1/3 cup shredded coconut
1/4 cup chia seeds

I started by adding the pitted dates, chick peas and vanilla and processed them first, then I added the natural peanut butter and made sure it was very well mixed together then I added the cocoa powder, chia seeds and coconut.  Make sure you process it till all ingredients are blended well together.

Press into a dish or...

Make them into little bites!
