Spaghetti squash ( a clean, low carb fall recipe)

From our garden:  spaghetti squash, cherry tomatoes, kale, garlic.... add olive oil and some honey garlic sausage




I could have added extra herbs or cheese, but I really wanted to enjoy the simplicity of our very own garden ingredients!  To cook the squash: poke holes all over, and place it on a plate in the microwave for 15 minutes, then cut it in half, scoop out the center mush with the seeds and use a fork to scrape the flesh out (it will be stingy).
